Slow cooker Honey and Garlic Chicken
Ingredients:
For Honey Garlic Chicken
- 4 boneless chicken breasts
- ¼ cup honey
- ¼ cup soy sauce
- 2 tablespoons hoisin sauce
- 3 gloves of garlic
- 1 tablespoon fresh ginger
- 2 tablespoons rice vinegar or apple cider vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon sesame oil
- 1 tablespoon crushed red pepper
- Sliced green onions
For Lemon Orzo
- 1 cup orzo pasta
- 2 cups chocken broth
- 1 cup water
- Zest of 1 lemon
- Juice of 1 lemon
- 1 tablespoon unsalted butter
- 2 tablespoons fresh parley
- Salt and pepper
- Lemon slices
Instructions:
- Prepare the Honey Garlic Chicken: in a bowl, whisk together the honey, soy sauce, hoisin sauce (if using), minced garlic, grated ginger, and rice vinegar.
- Place the chicken breasts in a slow cooker. Pour the honey garlic mixture over the chicken, making sur4e to coat them fully.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours. Until the chicken is tender nd easy to shred with fork.
- Cook the Lemon Orzo: about 30 minutes befor4e the chicken is ready prepare the Orzo.
- In a medium saucepan, combine the chicken broth, water, lemon zest, and lemon juice. Bring to a boil. Stir in the Orzo, reduce heat to low, cover and simmer for 10-12 minute or until the orzo is tender and the liquid is absorbed.
- Stir in butter, fresh parsley, and season with salt and pepper to taste.
- Serve the honey garlic chicken over the lemon orzo.
- Garnish with green onion, sesame seeds and additional lemon slices if desired.
