Ingredients:
- 2lb pork tenderloin
- ¼ cup honey
- ¼ cup grated parmesan cheese
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp dijon mustard
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- Fresh parsley (optional)
- Additional parmesan (optional)
Instructions:
- Prepare the marinade
o In a bowl whisk together honey, parmesan, olive oil, minced garlic, Dijon mustard, thyme, salt, and black pepper.
- Prepare the pork
o Place the tenderloin in the slow cooker, pour the marinade over the pork, ensuring it is well coated.
- Cook
o Cover and cook on low for 5-6 hours or on high for 3-4 hours or until the pork reaches an internal temperature of 145 degrees.
- Optional glaze
o If you prefer a caramelized finish, transfer the cooked pork tenderloin to a baking dish and brush with additional honey and parmesan cheese. Broil in the oven for 2-3 minutes until golden and bubbly.
- Rest and Serve
o Allow the pork to rest for 5-10 minutes before slicing. Garnish with fresh parmesan cheese if desired
